Today I want to share with you ABURA SOUMEN | Quick and Easy Stir-fried Somen Noodles of Amami Island.

This past weekend, I visited Amami island, located north of Okinawa, where my father was from. He passed away 9th of Sep last year; we couldn't bring his ash to his family grave for the covid situation. But finally, I took my father there to rest in peace.

Amami and Okinawa were officially added to the World Natural Heritage List by the UNESCO World Heritage Committee.

These islands have historically been known for longevity and have less cancer, heart disease, and dementia. Their lifestyle makes them live a longer and happier life than any other place on the planet.

I am going to show you their food culture here on KPB!

100g Somen Noodles (dried)
50g sliced pork
50g carrot
50g garlic chives
10g dried baby anchovy

200ml chicken soup
(1 teaspoon chicken soup paste
＋200ml hot water)
A pinch of salt
pepper
1 tablespoon sesame oil
