Traditional Kerala Style RED COCONUT CHUTNEY | How to make Kerala Style RED COCONUT CHUTNEY for dosa, idli, vada etc

Kerala Style Red Coconut Chutney is a spicy chutney recipe made with coconut and red chillies. Since I have used Kashmiri Red Chillies the spice level is very less as we love it this way. So please adjust the spice level according to your taste.
This is a very tasty chutney with flavors of ginger and shallots in it and goes well with South Indian breakfast like dosa, idli, vada, uttapam etc. This Kerala style red coconut chutney does not use fried gram in it. The taste and colour of the red coconut chutney mainly depends on the red chillies you use. This chutney is a good alternative to ourc regular coconut chutney. Do not forget to temper the chutney with coconut oil for an authentic flavour.

Ingredients :

200 gms Coconut (freshly grated)
2 nos Dry Kashmiri Red Chillies
½ inch Ginger
2 nos Shallots (Madras Onions)
¼ tsp Salt
¼ cup + ¼ cup Water (use drinking water)

Tempering :

1 tbsp Coconut Oil
½ tsp Mustard Seeds
2 small Shallots (Madras Onions)
1 sprig Curry Leaves

Notes
1. Make sure the coconut is at room temperature to get the right texture for the chutney. If using refrigerated coconut, microwave for a few seconds or bring it to room temperature and then grind it. Make sure you don’t add too much water while grinding. Add water gradually.

2, The consistency of this chutney is medium thick. Adjust the quantity of water to suit your consistency requirements.
