Ingredients:
1 cup water (250 ml)
1/2 teaspoon salt
1/2 teaspoon sugar
16 ounces all-purpose flour (450 grams)
1 teaspoon baking powder
2 large onions (finely chopped)
2 medium-sized potatoes (peeled and grated)
17 ounces minced meat (500 grams, beef and chicken mix)
1 teaspoon salt
1 teaspoon smoked paprika
1 teaspoon coriander
1/4 teaspoon black pepper
3.5 ounces butter (100 grams)
1 egg (for egg wash)
Milk (for egg wash)

To start, mix 1 cup of water with 1/2 teaspoon of salt and sugar until dissolved in a bowl; then, add 16 ounces of all-purpose flour and 1 teaspoon of baking powder. After stirring, knead the dough for 5 minutes, cover it, and let it rest for 20 minutes. While the dough rests, finely chop 2 large onions and grate 2 medium-sized potatoes. In a separate bowl, combine 17 ounces of minced meat with salt, smoked paprika, coriander, and black pepper, mixing thoroughly. Divide the rested dough into 4 balls, rolling each out thinly after melting 3.5 ounces of butter and brushing it onto the dough. Distribute the meat filling evenly over each rolled-out dough, make incisions, and fold it into a flatbread shape. Place them on a parchment-lined baking sheet. Whisk together 1 egg and a bit of milk, then brush the mixture over the flatbreads. Bake in a preheated oven at 180°C (360°F) for 35 minutes.
