My Grandmother makes puli inji | ಖಾರ,ಹುಳಿ,ಸಿಹಿ,ಕಹಿ ಮತ್ತೆ ಪರಿಮಳವೂ ಇರುವ ಪುಳಿಂಜಿ | Puli inji | Pulinji

A tasty gojju kind of curry by using mainly bitter gourd, ginger and green chillies. The curry can be best combination with rice, dosa, chapathi etc. That perfectly suits for chilled weather. This simple curry is called as "Pulinji'". This is a special dish of Kerala. When all the tastes like bitter, spice, sour, salt and sweets are balanced, nothing can be equivalent to this curry. And, it doesn't require much masala and spices. Spices used are methi seeds, mustard seeds and turmeric powder. This can be used for minimum 3 days in the room temperature. If boiled often and stored in refrigerator, it's life will be upto one week.


Ingredients:

Bitter guard, 2
Green chilli 20
Ginger 3pieces
Curry leaves
Tamarind 50grm
Jaggery 50grms
Salt to taste
Turmeric powder, 2sp
Coconut oil 4sp
Seseme oil 2sp,
Methi seeds 2sp
Mustard seeds 1sp
