What is Bara?

I like to call it the Surinamese johnny cake! It’s just like a johnny cake, but it contains different exotic ingredients. Some people sell stuffed bara’s, with saltfish or chicken.

Bara is usually eaten with chutney or chokha. Chokha is a sambal (pepper) made out of potato. Chutney varies in kinds, but they usually eat it with mango chutney, star fruit chutney etc.

Making the dough, takes a lot of energy! Because kneading it very good is important. Growing up, I would eat this a lot at parties or even home.

Ingredients:

2 kg flour
10 garlic cloves chopped (pepper optional)
4 tablespoons baking powder
1 tablespoon curry
2 tablespoon cumin powder
3 tablespoon salt
1/4 kg oerdie (peas) (soaked in water)
100 grams spinach
1 liter water

Method:

Add spices to oerdie peas and half the spinach
Add flour and baking powder
Mix the dry ingredients on the surface, then slowly combine it with the oerdie mixture.
Slowly add water bit by bit as you knead. Add the rest of the spinach to the dough and knead again.
Let rise for minimum 2 hours.

Frying process:

Using a bowl of water, wet your hands and take a bit of the dough. Make it round and flatten it. Make a hole in the middle and fry it on medium heat, as it turns golden brown, keep turning it. There you have it!
