Basa Steak Paksiw is a Filipino dish that combines basa fish steaks with the tangy and savory flavors of a traditional paksiw (a vinegar-based or bilimbi stew). The fish is simmered in a mixture of bilimbi, garlic, onions, tomato and, often with added ginger for extra aroma. This creates a rich, slightly sour sauce that complements the tender and flaky fish, making it a flavorful and comforting meal served with steamed rice.

Ingredients:

8 pieces of basa fish steaks
1/2 cup vinegar/ Bilimbi
1/4 cup soy sauce
4 cloves garlic, crushed
1 medium onion, sliced
2 tomato
1 thumb-sized piece of ginger, sliced
1 tsp whole peppercorns (Optional)
2-3 bay leaves 9 (optional)
1 cup water
1 small eggplant, sliced (optional)
Salt and pepper to taste
sugar ( optional)
1-2 tbsp cooking oil (optional, for sautéing)

Procedure:

Prepare the fish: Wash the basa fish steaks under cold water and pat them dry. Set aside.

Sauté aromatics (optional): In a pot or pan, heat cooking oil over medium heat. Sauté garlic, onion, tomato and ginger until fragrant.

Add the vegetables (optional): If using eggplant, add the slices after turning the fish. Cook until the eggplant softens.

Add liquid ingredients: Pour in vinegar/ bilimbi, and water. Add the peppercorns and bay leaves. Let the mixture simmer uncovered for 5-7 minutes, allowing the vinegar/ bilimbi to cook off slightly.

Simmer the fish: Gently place the basa steaks in the pot. Simmer on low heat for 10-12 minutes, turning the fish once halfway through to ensure it cooks evenly.

Season to taste: Add salt and pepper as needed. If you prefer a slightly sweeter paksiw, add sugar at this point and stir gently.

Serve: Once the fish is tender and the sauce has thickened, remove from heat. Serve hot with steamed rice.
