Style Sweet Potato Masala Fry

This Indian Style Sweet Potato Masala Fry highlights the natural sweetness of sweet potatoes combined with aromatic Indian spices and the fragrant addition of curry leaves. It's an easy-to-make, flavorful side dish or snack.

*Ingredients:*
2 large sweet potatoes
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 sprig curry leaves
1 green chili, finely chopped (optional)
1 teaspoon turmeric powder
1 teaspoon garam masala
Salt to taste

Peel the sweet potatoes and chop it into small pieces.
Heat the vegetable oil in a large skillet or frying pan over medium heat.
Add the cumin seeds. Let them sizzle for a few seconds until aromatic.
Add the curry leaves and green chili (if using). Sauté for another minute until the curry leaves are crispy.
Add the turmeric powder and salt. Mix well.
Add the blanched sweet potato strips and toss to coat them evenly with the spices.
Cook on medium heat, stirring occasionally, until the sweet potatoes are crispy and cooked through. This should take about 10-15 minutes. Make sure not to overcrowd the pan for even cooking.
Sprinkle garam masala over the sweet potatoes and mix well.
