Resep Vietnamese Beef Pho

Kuah (8-10 porsi):
500 gr iga / tulang sapi
500 gr daging potongan besar
100 gr kikil / urat, opsional
5 liter air
1 sdm garam
4-5 sdm kecap ikan
20-30 gr gula batu / gula pasir
½ sdm kaldu
½ sdt merica

Rempah:
2 buah bawang bombai, potong
2 ruas jahe
2 sdm ketumbar
5 butir kapulaga
4 buah bunga lawang
2 batang kayu manis
3 butir cengkih

Pelengkap (untuk 2 porsi):
100 gr daging segar slice tipis
2 bungkus Skinny Pasta Fettuccine Shape
½ buah bawang bombai, iris
1 batang daun bawang, iris
Daun ketumbar
Daun kemangi
Daun mint
Cabai hijau, iris
Cabai merah, iris
Jeruk nipis
Tauge segar
Saus hoisin
Sriracha / saus sambal

Langkah:
1. Rebus tulang iga dan kikil selama 5-10 menit, buang air dan lemaknya kemudian cuci dengan air mengalir
2. Sangrai rempah hingga kecoklatan, sisihkan
3. Sangrai juga bawang bombai dan jahe, sisihkan
4. Masukkan tulang, daging, kikil, rempah sangrai, bawang bombai, jahe, air, merica dan garam kemudian presto selama 1 jam
5. Setelah dipresto, buang minyak di bagian atas kuah
6. Sisihkan daging dan kikil, saring kuah
7. Masukkan gula batu, kaldu bubuk dan kecap ikan, aduk rata
8. Masukkan daging dan kikil yang sudang dipotong lalu masak hingga kaldu mendidih
9. Rendam bawang bombai, daun kemangi, daun bawang, daun mint dan daun ketumbar di air dingin
10. Bilas Skinny Pasta Fettuccine shape dengan air mengalir kemudian rebus sebentar dengan air mendidih
11. Susun Skinny Pasta Fettuccine Shape, daging iris dan bawang bombai kemudian siram dengan kuah kaldu yang mendidih. Sajikan dengan tauge, daun kemangi, daun mint, daun bawang, daun ketumbar, jeruk nipis, cabai merah, cabai hijau, saus hoisin dan sriracha sebagai pelengkap

Vietnamese Beef Pho Recipe

Broth (8-10 servings):
500 g beef ribs / bones
500 g large-cut meat
100 g gravel / tendon, optional
5 L water
1 tbsp salt
4-5 tbsp fish sauce
20-30 g rock sugar / white sugar
½ tbsp stock powder
½ tsp pepper

Spices:
2 pc onion, sliced
5 cm ginger
2 tbsp coriander
5 pc cardamom
4 pc star anise
2 pc cinnamon
3 pc clove

Condiments (for 2 servings):
100 g thinly sliced beef, raw
2 pack Skinny Pasta Fettuccine Shape
½ pc onion, sliced
1 pc green onion, sliced
Cilantro
Basil
Mint
Green chili, sliced
Red chili, sliced
Lime
Fresh beansprouts
Hoisin sauce
Sriracha / chili sauce

Steps:
1. Boil the ribs and gravel for 5-10 minutes. Remove the water and fat, then rinse under running water.
2. Toast the spices until browned. Set aside.
3. Toast the onion and ginger. Set aside.
4. Add the bones / ribs, meat, gravel, toasted spices, onion, ginger, water, pepper, and salt into the pressure cooker and cook for 1 hour.
5. Once it’s done, remove the fat on the broth’s surface.
6. Set aside the meat and gravel. Strain the broth.
7. Add the rock sugar, stock powder, and fish sauce in. Mix well.
8. Add the sliced meat and gravel. Bring the broth to a boil.
9. Soak the onion, basil, green onion, mint, and cilantro in cold water.
10. Rinse the Fettuccine-shaped Skinny Pasta under running water. Cook for a moment in boiling water.
11. Assemble the Fettuccine-shaped Skinny Pasta, sliced beef, and onion. Pour the boiling hot broth in. Serve with beansprouts, basil, mint, green onions, cilantro, lime, red chili, green chili, Hoisin Sauce, and Sriracha on the side.
