I really like the aroma of the Thai Basil. Stir fry firm tofu until golden crispy assembled with the meat texture, no need to mention the umami from beech mushroom. I also added seasonal vegetable and cowpea for an added sweetness. The Thai basil is the key in this dish, and cannot be skipped.
这道菜是我非常喜欢的,主要是我很喜欢九层塔的香气,用新鲜的老豆腐煎到底部金黄会有肉的嚼劲,搭配蟹味菇的滑嫩口感完全不输肉,我还加入了这个季节的豇豆,鲜甜好吃增加了不少风味,这道菜九层塔是不能省略的了,灵魂风味的来源!

Ingredients/材料:
老豆腐 300g Firm Tofu
红豇豆 80g(红色绿色都可) 80g Cowpea
蟹味菇 1颗 One Beech Mushroom
生姜末 6g Minced Ginger
小米辣 3个 3 Tabasco Pepper
九层塔 一大把 Thai Basil

Seasonings/调味料:
生抽 1.5大勺 1.5 Tbsp Soy Sauce
香菇蚝油 2小勺 2 Tsp Oyster Sauce
海盐 一丢丢 1 Pinch of Salt
现磨白胡椒或胡椒粉¼小勺 1/4 Tsp Freshly grounded white pepper
淀粉 ½小勺 1/2 Tsp Starch
红糖 2小勺 2 Tsp Brown Sugar

Tips:
1.如果制作多人份,豆腐就需要单独煎到金黄取出再煎其他食材,避免食材重叠受热不均
If making for large servings, make sure to stir fry tofu until golden brown, then add remaining ingredients to avoid uneven heating.
2.食材一定要耐心等待底部金黄,结尾汤汁不要收得太干了
Be patient, until the ingredients is golden brown.
