I have been using buckwheat in my raw vegan recipes for over 10 years and it is one of my favorite ingredients to use because of its versatility. It's not a wheat at all but a seed.
Despite its name, buckwheat is actually a seed, not a grain, related to rhubarb, and thus is gluten-free. Just like nuts and seeds, buckwheat contains phytic acid, which inhibits the absorption of nutrients and requires soaking. High in zinc, copper and manganese, 1 cup of buckwheat contains 23 grams of protein, making it a great source of plant protein. Once sprouted, buckwheat becomes more bioavailable and easier to digest. Buckwheat is also a good source of soluble and insoluble fiber; just 100 grams contains 10 grams of fiber.

RECIPE:
Equipment: Colander or strainer, large bowl, dehydrator

✅ 1 cup raw buckwheat groats (make sure they have not been roasted or they will not sprout)
✅ Filtered water

➡️ Soak buckwheat in a large bowl for 20 minutes. Rinse well and drain. Leave buckwheat in a strainer and place it over the top of a large bowl to catch the water. Rinse 2 to 3 times a day and allow to sprout for 24 to 36 hours until a tail emerges as long as the width of your pinky.

➡️ When a recipe calls for sprouted and dehydrated buckwheat, spread the sprouted buckwheat on a lined dehydrator tray and dehydrate at 115 F (46 C) for 12 to 18 hours until fully dry. Store dehydrated buckwheat at room temperature until use.

To make flour, blend dried and cooled groats in a high-speed blender until flour forms. Sift buckwheat flour through a fine mesh strainer into a bowl or container. Store in a sealed container at room temperature for a couple of months or in the fridge or freezer for longer.

Notes:
1 cup of buckwheat groats equals approximately 3 cups of sprouted buckwheat.

If the buckwheat has been on the shelf for too long or is roasted, it will not sprout. Make sure you source from a reputable, good-quality supplier. The longer the tail, the more bitter the taste becomes.
