join me as I clean the stove and prepare to make a homemade pizza baked in cast iron!

Pizza Dough Recipe

1/2 Cup Whole Wheat Flour
1/2 Cup All Purpose Flour, plus 1 Cup separated
3/4 teaspoon Salt
1 1/2 teaspoon Sugar
2 Tablespoons OR 1 Sachet Quick-Rise/Instant Yeast
Seasonings to taste (Optional)
2 Tablespoons Olive Oil
3/4 Cup Warm Water

Mix until a ball is formed, then gradually add in the reserved cup of flour until a soft dough is formed. knead until it becomes smooth and elastic.
Grease a medium bowl with olive oil. Place dough in the bowl, and coat it thoroughly in oil.
Cover bowl with a towel, beeswax wrap, or cellophane, and let rise for 30 minutes undisturbed, or until about doubled in size.
If freezing, place in tight cellophane or beeswax wrap inside of a freezer bag, for up to 3 months. if refrigerating for the next day or 3, wrap tightly in cellophane or beeswax wrap. allow to thaw and rise for 30 minutes or until about doubled.

After rise:
Preheat the oven to 350°F - 400°F (ovens may vary, use an oven thermometer for best results)
When the oven reaches temperature, place a cast iron pan on the middle rack. Heat for 5-10 minutes.
For a thin crust, use half of the dough. For a fluffy or stuffed crust, use a larger pan.
Stretch dough by hand or use a rolling pin to shape the dough into a disc about the size of your pan. For stuffed crust, place stuffing (cheese, pepperoni, herbs) in a circle with a 1 inch edge. Roll the "hem" over the stuffing, and firmly press to seal.
Use a fork to perforate the middle.
Remove the pan from the oven after 5-10 minutes, and coat with olive oil.
Lay the dough in the pan, and cover with olive oil.

Spread sauce and toppings evenly, and bake on middle rack for 15-30 minutes, or until crust and cheese are browned.
