The story of Sikandari Raan takes us back to the time when Alexander the Great invaded India and defeated Porus And when he was later asked how to deal with him. Porus replied as one king does to another king. Pleased by this Alexander embraced him and prepared a special feast to welcome him.
Where it is believed that this Raan(goat leg) was served. Consequently, this dish acquired its name Sikandari Raan from Alexander because Alexander in India is known as Sikandar.

Ingredients:
A whole goat or lamb leg, 100 grams of goat fat.

First Marinade
2 tablespoons of ginger, garlic, & green chili paste, raw papaya paste- 2 tablespoons, Salt as per taste, Red chili powder- Approx 1
tablespoons.
Second Marinade
Hung yogurt- approx 150 grams, 1 tablespoon of Garam Masala powder, black salt as per taste, 1 teaspoon of mint powder, 1 tablespoon of Kashmiri chili powder, a half teaspoon of mace and green cardamom powder, 1 tablespoon of dry fenugreek leaves (Kasoori Methi), optional orange-red food color, 2-3 tablespoon pre-heated mustard oil, clarified butter for basting.

Gravy
10-12 cashew nuts and almonds, a piece of cinnamon, 2-3 bay leaves, 2-3 black cardamom,
a half flower of mace, 8-10 peppercorns, 7-8 cloves, 2-3 green cardamoms, 5-6 whole red chilies, 1/4 piece of nutmeg, a teaspoon of cumin seeds, a teaspoon of kalpasi, a teaspoon of coriander powder, a teaspoon of cumin powder, a half teaspoon of turmeric powder, a half teaspoon of fennel powder, a tablespoon of Kashmiri red chili powder, 1/4th teaspoon of ginger powder, 1 tablespoon of salt. you can take as per your taste as well, a half teaspoon of Garam Masala powder, 4 big-sized onions that weight is approx 300 grams, 2 medium-sized tomatoes that weight is approx 150 grams, approx 200 ml of mustard oil, Coriander leaves for garnish.
