It is best to have this Multigrain Dosa for breakfast. You can have this Multigrain Dosa with sambar and chutney. I am going to show you a spicy chutney that goes along with this dosa.

Prep time: 6 hrs soaking + 8 hrs fermenting
Cook time: 30 mins
Number of servings: 5-6 people

Ingredients for Multigrain Batter
Chana Dal - 1/4 CUP
Moong Dal - 1/4 CUP
Urad Dal - 1/4 CUP
Toor Dal - 1/4 CUP
Corn Kernels - 1/4 CUP
Green Gram Dal - 1/4 CUP
Black Gram Dal - 1/4 CUP
Ragi - 1/4 CUP
Foxtail Millet - 1/4 CUP
Red / Brown Rice - 1 1/2 CUP
Green Chillies - 3 NOS
Ginger - 1 Piece
Salt - 1/2 TSP

For Spicy Onion Chutney
Oil - 2 TSP
Onion - 2 CUP
Garlic - 7 Cloves
Red Chillies - 10 Nos
Tamarind - 4 Pieces
Coriander Leaves - 1/4 Bunch (Chopped)
Rock Salt - 1 TSP
Oil - 1 TSP
Mustard Seeds - 1/2 TSP
Urad Dal - 1/2 TSP
Asafoetida - 1/2 TSP
Curry Leaves

Method

Multigrain Dosa
1. Soak all the ingredients together for the batter except, green chilies, ginger, coriander leaves.
2. After about 6-8 hours grind the batter along with green chilies, ginger till its smooth
3. Let the batter ferment for about 8 hours
4. Once the batter is fermented, make dosas with the batter.
5. Serve the dosas hot with sambar and chutney

Spicy Onion Chutney
1. Saute onions and garlic till they are golden
2. Add red chilies, tamarind and salt along with it and saute them
3. Let the ingredients cool down and grind it to a coarse paste
4. Temper the chutney with mustard seeds, urad dal, asafoetida and curry leaves
