Vegan Mozzarella Cheese 純素莫札瑞拉起司(純素食,無奶蛋)

Ingredients:
1/2 cup raw cashews
3 cups filtered water (1 ½ cups for soaking the cashews)
3 Tbsp tapioca flour
1 tsp apple cider vinegar
2 Tbsp nutritional yeast
½ tsp salt

Directions:
1. Pour the raw cashews into a container with 1 ½ cups filtered water. cover and soak it in the fridge for 4 to 6 hours, then drain and rinse it.
2. Place all the ingredients into a high-speed blender and blend on high until creamy and smooth.
3. Pour the mixture into a pan over medium heat and stir frequently until clumps are forming.
4. Keep stirring at all times until the mixture will becomes really stretchy and thick.
5. Now, the cheese is ready to be used. Furthermore, you can shape it to make it easier to be used.
6. Let it cool a little, then put it into a 6 litter zipper bag.
7. Push air out of the zipper bag and seal it.
8. Evenly press and roll out the zipper bag. You can open it a little bit for pushing the remaining air out if needed.
9. Separate the cheese in the bag into 12 pieces by using spatula, then freeze it overnight.
10 Fold the cheese bag along the cut lines to separate the cheese in the bag into pieces. Now, you have 12 slices of cheese.

Prep time: 10 minutes

Ingredients:
90g raw cashews
3 Tbsp nutritional yeast
½ tsp salt

Directions:
1. Add all ingredients to a blender and pulse for 2-3 long pulses until it reaches a fine consistency. Don't over pulse or it will start to clump.

Tips:
Store in airtight container and refrigerate for several weeks.
