SPINACH AND ALMOND SOUP

Ingredients

3 cups shredded spinach leaves
¼ cup chopped almonds
1 tbsp butter + for topping
1 bay leaf
4-5 garlic cloves
1 large onion, finely chopped
8-10 black peppercorns
2 cups vegetable stock
Salt to taste
Fresh cream for garnish
Almond slivers for garnish

Method

1. Heat butter in a non-stick pan. Add bay leaf, garlic cloves, onion and black peppercorns and sauté for 1-2 minutes.
2. Add almonds and mix well. Add vegetable stock and salt and mix well. Cover and cook till the mixture comes to a boil.
3. Add the spinach leaves, mix and cook for a minute. Discard the bay leaf and cook for a minute.
4. Switch the heat off and blend the mixture using an electric hand blender till the mixture is well blended.
5. Pour the soup into serving bowls, add some Milky Mist Cooking Butter on top, garnish with fresh cream and almond slivers.
