CORN SPINACH QUESADILLAS (Without White Sauce)

Try making a delicious corn spinach quesadilla using roti, paratha, or tortilla! 🌽🌿 I have made the corn spinach mixture without adding white sauce; making it relatively healthier than the regular version. You can also use this mixture to make a tasty grilled sandwich. It’s a versatile dish that’s perfect for a quick and flavorful meal. Give it a try and amp up your lunch or dinner game! Don’t be afraid to get creative in the kitchen and experiment with different ingredients and flavors. Plus, it’s a great way to sneak in some extra veggies and nutrients into the entire family’s diet.

Recipe-
Coarsely chop 2 boiled sweet corn
In a pan, heat up some oil
Add chopped garlic & green chillies
Then add 1 medium size finely chopped onion
Add salt
Cook till it becomes soft
Then add, coarsely chopped sweet corn along with some whole corn kernels
Mix everything well
Add 100 gm paneer and 1/2 cup of milk
Cook the mixture till it comes to creamy consistency
Add 2 tsp mix herbs and 1 tsp chilli flakes
At last, add 1 big bunch of finely chopped spinach
Cook only for 5 minutes
Do not cover, and do not overcook the spinach.
Let mixture come to room temperature
Now spread it on a roti, paratha, tortillas.
And add some shredded cheese on top
Fold the quesadillas half as shown in video
Now place quesadillas on a hot pan and grill them with oil or butter till you get nice golden collar and quesadillas become crispy
With corn and spinach mixture you can make grilled sandwiches as well
