In this week's episode we show you how to make lox from scratch.

INGREDIENTS:

2 lbs. of thick salmon filet
1/2 cup of brown sugar
1/2 cup of kosher salt
2 cups of freshly chopped dill
1/4 to 1/2 cup of brandy or whisky

DIRECTIONS:

Dry the salmon with paper towel before adding ingredients
Mix the sugar and salt and spread evenly on the salmon
Cover the salmon with chopped dill
Drizzle the brandy/whisky over the salmon
Cover the dish with cellophane
Place weights on the salmon
Keep salmon in the refrigerator for three days
Once a day, drizzle some of the liquid inside the dish over the salmon
On the fourth day, scrape off the dill and sugar/salt mixture and rinse
 under cold water.
Dry with paper towel and cut into thin slices using a straight-edge sharp knife

Serve with mustard-dill sauce as a topping (optional)
