Dahi Phulki is a delightful dish that holds a special place during the holy month of Ramadan.
What is Dahi Phulki?
Dahi Phulki is a popular Awadhi snack enjoyed during Ramadan. It’s also commonly served as an accompaniment to pulao on regular days.
The dish consists of small, fried pakodis (known as phulkis) soaked in warm water.
Here is a recipe.
Making Gram Flour Paste:
Corn flour : 200 gram
Onion chopped : 1 small size
Green chili : 2 chopped
Salt : 1/2 tsp
Cumin : 1/2 tsp
Red chili powder : 1/2 tsp
Turmeric powder : 1/2 tsp
Cumin powder : 1/2 tsp
Baking powder : 1/3 tsp
Pour water little by little and mix it well
Now rest it for 5 to 10 minutes
Making Chili Paste:
Cumin : 1 tsp, Dry chili : 4 and Garlic cloves : 2
Now make a thick paste
Making Yogurt mixture:
Yogurt : 500 gram
Salt : 1/2 tsp
Red chili paste : 1 tsp
Milk : 200 ml
Add gram flour mixture in to the water, if mixture flow on water means paste is in good condition other wise mix it again well.
Frying:
Now heat up oil on medium flame
Now fry it on low medium flame for 6 to 8 minutes
Now cool it completely and then add it in to the water
Now rest it for 5 to 7 minutes
Cumin Frying:
Oil : 3 tbsp
Cumin : 1/2 tsp
Dry red chili : 2
Now fry it for a few seconds
Now rest it for a 1 second
Mix well.
Enjoy.
