Meatballs and Pasta

Meatballs and pasta is a classic. The sauce can be red or white sauce. The meatballs can be just straight meat or you can hide a bunch of veges. Chicken, beef, pork or even a mixture of meats! The options are endless. So lets get into the kitchen and experiment.

Ingredients

2kg beef mince (doesn’t have to be ‘lean’)
2 carrots
1 capsicum
2 onions
2 eggs
4 tsp Garlic
4tsp Ginger
Steady Mustard
Parmesan cheese

Sauce
1.5l tomato sauce
2 tins crushed tomatoes
3 tbls peanut butter
Garlic
Ginger
Steady Mustard

Pasta

Method

1. Blend up vegetable either in a hand blender or machine. In a large bowl combine veges, meat, eggs, garlic and mustard. Once combined for a meatball about the size of a 50c coin. Place in baking dish. Repeat till no mix left
2. Combine sauce ingredient in a bowl. Seasoning to taste. Pour over meatballs.
3. Bake in a preheated oven ,180c, for 1hr.
4. Cook up pasta
5. Once cooked plate up pasta and put the meatballs and sauce over the top. Add parmesan cheese to garnish.
