INGREDIENTS :
1 Kg Fresh Chicken
1 tbsp ginger garlic paste
1½ tbsp chili powder
1½ tbsp curd
1 tbsp coriander powder
1 tsp cumin powder
1 tsp garam masala
½ tsp turmeric powder
1½ tbsp lime juice
pinch of carom seeds
1 egg white
½ tsp pepper powder
salt to taste

2nd MArinade
3 tbsp maida flour
2 tbsp corn flour
½ tsp baking soda
METHOD:
Add the chicken pieces and all the ingredients mentioned in a large bowl and mix thoroughly to coat the chicken. Set aside for 30 minutes OR for better results cover the bowl and refrigerate for at least 2 hours. (overnight is best for more flavor).
Next, after 2 hours add maida flour, corn flour, and baking soda and mix well to ensure all the dry ingredients are evenly distributed.
Heat vegetable oil in a deep frying pan or wok over medium-high heat.
Carefully lower the coated chicken pieces into the hot oil, being mindful not to overcrowd the pan. This will help maintain the oil temperature and ensure the chicken crisps up nicely.
Fry the chicken in batches, cooking for about 12-15 minutes per batch. Turn the chicken occasionally to ensure all sides are crispy and golden brown.
Once the chicken is crispy and cooked through, carefully remove it from the oil and place it on a plate lined with paper towels to drain excess oil.
