Here’s a one pot recipe for Soya pulao that is soo simple to make. It’s tasty and nutritious, has the goodness of proteins as well!

Ingredients I used:
Around 1/2 cup soya beans + water for soaking
3/4 cup rice
1 onion, roughly sliced
2 tomatoes, roughly chopped
2 green chillies
1/2 tbsp ginger garlic paste
salt
2 to 3 tbsp oil/ghee (I used a mix of both)
2 bayleaves
1/2 inch cinnamon stick
6 to 8 peppercorns
2 cardamom//elaichi
1/2 tsp jeera
1 star anise
1 cup water
2 tbsp coriander leaves

Procedure:
Soak soya chunks in hot water and rice in room temperature water for 20-30 mins.
Drain away water from both.
In a pressure cooker, heat oil/ghee and add your whole spices (bayleaves, cinnamon, cardamom, star anise, pepper and jeera) and add your onions and ginger garlic paste. Cook till onions are golden on sides.
Add green chillies, tomatoes and mix it well.
Add your red chilli powder and biryani masala. Mix well.
Lastly add your soaked soya chunks, rice and water. And pressure cook till it leaves one whistle.
Open the cooker and wait for 5-10 mins before serving so that the rice is flaky. It will be sticky if you serve it immediately.
