Turkish Rice in My Style

Ingredients:
1 Mutton full leg
Salt, to taste
2 tsp Cumin powder
2 tsp Coriander powder
1 tsp Chat masala
1/2 tsp Hot spices
1/4 tsp Tailed pepper powder
2 tsp Tandoori mutton masala
3 tsp Red chilli powder
1/3 tsp Turmeric powder
2 tsp Ginger Garlic Paste
10 ml Vinegar
1 cup Water
1/3 cup Tomato sauce
1 cup Curd
Aluminum foil

Step 1:

1. In a flat plate, combine all the ingredients: salt, cumin powder, coriander powder, chat masala, hot spices, tailed pepper powder, tandoori mutton masala, red chilli powder, turmeric powder, ginger garlic paste, vinegar, 1 cup water, tomato sauce, and curd.
2. Mix the ingredients well to form a marinade.
3. Apply the marinade evenly on the mutton pieces, making sure to coat them inside and out.
4. Wrap the mutton in aluminum foil and let it rest in the refrigerator for at least 2 hours or preferably overnight.

Step 2:

1. Preheat your oven to 180°C (356°F).
2. Place the marinated mutton on a grill rack and grill it for 45 minutes until it is partially cooked. If you don't have an oven, you can grill the mutton on coal with foil for the same duration.

Step 3:

1. In a pan or pressure cooker, heat 5 ml cooking oil and 5 ml olive oil.
2. Add 1 sliced onion, 3 to 4 chopped green chillies, 1 tsp black pepper seeds, 1/2 tsp chilli flakes, 1 tsp tailed pepper powder, 3 to 4 cardamom pods, 1 sliced capsicum, and 3 to 4 baby corn. Also, add 1/3 tsp turmeric powder.
3. After cooking for 2 minutes, add 1 large tomato cut into 2 pieces.
4. Pour 2 glasses of water into the pan or pressure cooker and bring it to a boil.
5. Add the partially grilled mutton to the boiling water and cook until the mutton becomes tender.

Step 4:

1. In another cooking pot, heat 10 ml cooking oil and 10 ml olive oil.
2. Add 1 tsp black pepper, 2 bay leaves, 1 mace, and 1 big cardamom. Mix the spices.
3. Add 1 finely chopped green onion, 1/2 bowl of mint leaves, 2 to 3 baby corn, 2 tsp red chilli powder, 1/2 tsp turmeric powder, 2 tsp black pepper powder, and salt to taste. Stir and cook for 1 minute.
4. Pour 700 ml water for 1/2 kg of Basmati rice into the pot. Also, add mint leaves and black lemon.
5. Once the water starts boiling, add the soaked Basmati rice to the pot.
6. After 5 minutes, add 1 bunch of garlic and 2 tomatoes cut into 4 pieces each.
7. Continue to cook until the rice is fully cooked. Adjust the seasoning and add ghee as needed. Let it simmer on low flame for 10 minutes. You can also give it a smoky flavor by using coal steam.

Final Step:

1. Check the mutton to ensure it is tender and dry.
2. If desired, you can give it a smoky flavor by placing a piece of coal in a small bowl inside the pot with the mutton. Drizzle 1 tsp of ghee over the coal and cover the pot for 1 minute.
3. Remove the coal and serve the rice with the mutton.
