簡易鳳梨酥 Easy Recipe Pineapple Cakes

鳳梨酥
鳳梨酥是台灣受歡迎的特色食品之一，裏面是香甜軟糯的鳳梨（菠蘿）餡，外面是酥香的牛油酥皮，甜中帶點酸的菠蘿味道，令你吃了停不下來。造型可以各適其式，有用菠蘿模具印出來，也可以用長方形、心型、圓型曲奇印模，如果沒有印模，搓成小圓球也很方便好看。
這裏用的模具是可容纳30克至35克的材料，如果用其它形狀的模具，可以用粉團先行測試填滿要多少克，然後按不少於2:3的比例分割餡及皮，因為鳳梨酥主要吃酥皮，所以建議不妨皮的份量佔多些，不但可吃到酥皮也減少爆裂漏餡的機會。這裏用餡：皮的比例差不多1:2。
不妨預先製作好菠蘿餡存放在冰箱冷藏格，隨時可以拿來用。

這個食譜可做16個30-35克鳳梨酥。

菠蘿餡：
菠蘿肉500克
麥芽糖 60克
砂糖30克
檸檬汁15克 （視乎菠籮酸甜度）
牛油10克

餅皮:
牛油100克
糖粉40克
雞蛋1個（只需要45克；餘下的可用來掃面）
奶粉30克
低筋麵粉180克
綠茶粉1茶匙／食用綠色色素適量

190 ° C中層烤10分鐘，掃蛋液，再170 ° C烤10分鐘至上色。

Pineapple Cakes

Pineapple cake is one of the most popular snacks in Taiwan. It has sweet and sour pineapple filling, and the outside is sweet buttery pastry. The sweet and sour pineapple taste makes you mouth watering. You can use a pineapple-shaped mold, or a rectangular, heart-shaped, or round cookie mold. You can also just make a small ball which is easy, cute and good looking.
The mold used here can hold 30 grams to 35 grams of material. If you use other shapes of molds, you can test how many grams to fill with a dough first, and then divide the filling and skin at a ratio of not less than 2:3. Pineapple cake with thicker pastry has better texture and also can reduce the chance of bursting and leaking. This recipe has filling:skin ratio almost 1:2.
You may wish to make pineapple filling in advance and store it in the refrigerator compartment, ready to be used.

Pineapple Filling:
500g pineapple shreds
60g maltose
30 g sugar
15g lemon juice (depend on taste)
10g butter

Dough:
(Can make 16 pieces each 30-35g )
100g softened butter
40g caster sugar
1 egg (need only 45g; save some for egg wash if the egg is large)
30g milk powder
180g cake flour
1 tsp green tea powder / appropriate amount of green food coloring

Bake at 190 ° C middle rack for 10 mins, apply egg wash, 170 ° C for another 10 mins.
