1 tsp ground coriander
1 tbsp fresh coriander leaves
1 tsp chili flakes
1 tsp ground fenugreek
¾ tsp salt
½ tsp garlic salt
Flours:
130g gram flour (chickpea flour/besan)
1 tbsp cornflour
Baking Soda: ½ tsp bicarbonate of soda
Water: 135 ml to create the batter
Preparation Instructions:
Slice the Onions: Use a knife or mandoline to slice onions thinly. A mix of uniform and rustic slices adds texture.
Mix the Ingredients: In a large bowl, combine the sliced onions, spices, gram flour, cornflour, and bicarbonate of soda.
Add Water Gradually: Pour water into the mixture a little at a time, stirring until a thick batter forms, coating the onions.
Shape the Bhajis: Scoop a spoonful of the batter, compact it slightly, and prepare it for frying.
Cooking Instructions:
Heat the Oil: Warm vegetable oil in a deep pan to around 180°C (350°F). Test with a small drop of batter—it should sizzle and float.
Fry in Batches: Gently lower spoonfuls of the batter into the hot oil, cooking 4-5 bhajis at a time. Fry for 3-4 minutes, flipping once, until golden brown.
Drain and Keep Warm: Remove bhajis with a slotted spoon and drain on kitchen paper. Keep cooked batches warm in an oven at 130°C (250°F).
Repeat: Continue frying until all the batter is used.
