Easy Fruitcake

Fruitcake

¼ cup butter or margarine, melted
½ cup brown sugar
2 eggs medium eggs
½ cup Pineapple/orange juice
¼ cup honey
⅛ cup cherry brandy


1 ½ cup flour, sifted
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon nutmeg
¼ teaspoon cinnamon powder


Fruit and Nuts Mixture
1 ½ cups assorted glazed fruits
1 cup walnuts, chopped
1 cup split cashew nuts
½ cup golden raisins
½ cup black raisins
½ cup cherry brandy
soak the mixture for 24 hrs to 3 days before using (refrigerated)

Toppings
Red cherries

Bake at 160c for 45 minutes
water bath method

Brush fruitcake with cherry brandy every week for four weeks, then every two weeks.
