Mauritian Lamington Cake Recipe

Ingredients:

200g plain flour
1 tsp baking powder
200g melted butter
135g caster sugar
4 eggs
1 tsp vanilla essence

Buttercream:
65g butter
150g icing sugar
1 tbsp milk
A drop of vanilla essence

Syrup:
80g strawberry jam
500ml boiling water
2 spoon sugar

Coating:

150g desiccated coconut
Cherries for topping

Instructions:
Preheat your oven to 180°C (350°F).
In a bowl, sift together the plain flour and baking powder.
In another bowl, beat the butter, sugar, eggs, and vanilla essence until well combined.

Gradually fold in the flour mixture until you have a smooth batter.

Pour the batter into a greased square baking pan and bake for 30 minutes or until a toothpick inserted comes out clean.

Let the cake cool completely.

Prepare the buttercream by beating the butter, icing sugar, milk, and vanilla essence until creamy.

Cut the cooled cake into squares.
Boil the strawberry jam, sugar,water to create a syrup and add red food colouring.

Dip each cake square into the syrup, ensuring it’s fully coated.

Roll the soaked cake in desiccated coconut.

Pipe the butter cream on the cake.

Allow the Lamingtons to set before serving.
