Quinoa & Veggie Stir-Fry 🌱

Ingredients:

• 1/2 cup quinoa (cooked)
• 1/4 tsp salt 🧂
• 3 tbsp olive oil 🫒
• 1 onion (chopped) 🧅
• 1/4 tsp salt 🧂
• 2 tbsp garlic (minced) 🧄
• 1 1/2 cups potato (diced) 🥔
• 1 tbsp curry powder 🌶️
• 1/4 tsp red pepper flakes 🌶️
• 2 cups mushrooms (sliced) 🍄
• 2 cups spinach 🥬
• 1/2 cup cooked beetroot (chopped) ❤️‍🔥

Instructions:

1. Cook the quinoa:
• Rinse quinoa under cold water. Cook it in water with 1/4 tsp salt until tender, then set aside.
2. Prepare the veggies:
• Heat olive oil in a pan over medium heat. Add onion and sauté until soft. 🧅
• Add garlic and cook for 1 minute. 🧄
3. Add potatoes:
• Stir in diced potatoes, curry powder, and red pepper flakes. Cover and cook until potatoes are tender. 🥔🌶️
4. Mushrooms and beetroot:
• Add mushrooms and beetroot, cooking until mushrooms are soft. 🍄❤️‍🔥
5. Combine with quinoa:
• Mix the cooked quinoa into the veggies. Adjust seasoning as needed. 🌱
6. Finish with spinach:
• Add spinach at the very end to keep its vibrant green color. Do not cover the pan. 🥬
