Hello Friends!!!
A Chashni gujiya (Hindi: गुजिया), is a sweet deep-fried dumpling made with semolina or white flour and stuffed with a mixture of sweetened milk solids ; also called mawa and dried fruits. It is also dip in Sugar Syrup, It is a Traditional sweet Dish made Particularly on Holi, A Festival of Colours.

INGREDIENTS :

, 1/2 Kg. White Flour, 200 gms.
Roasted Milk Solids/ Condensed Milk ,Cooking Oil, 150 Gms.
Tagar / Sugar Powder, 25 Gms. Raisins, 25 Gms. Chopped
Cashew Nuts, , 25 Gms. Charoli, 25 Gms. Chopped Almonds,
1 tsp Cardamom Powder, A pinch of Saffron, 25 Gms.
Pistachios, 1 Grated Coconut , 400 Gms. Sugar, White Flour
Liquid ( 2 Tsp White Flour dissolved in Water ).

RECIPE :

Put white Flour in a Mixing Bowl, Put 2-3 tsp of oil in to the
white flour and mix well. take a small quantity of mixed Flour in
hand and try to make a ball, if it is done , then alright otherwise
add some more oil and mix. Add some water and knead the soft
dough. Dough is ready , cover it and set aside for rest for 10
minutes.
In the Meantime , Prepare sugar syrup,
Put a Fry Pan on gas and pour 3 glass of water, add sugar, and
add pinch of saffron, Mix well and let it boil for 15 minutes.
In the mean time prepare Dumpling ( Gujia ) stuff, for that put
Solid milk in a Mixing Bowl, add Grated Coconut, Raisin, chopped Almonds, Pistachios, Cashew Nuts, Charoli, cardamom Powder, Tagar/ sugar Powder, Mix well. Caution - No lump should be there. Dumpling stuff is ready.
Now knead the dough again,
Take some Dough in hand and roll on the rolling board in length,
Cut with knife and make few pieces. Pick one piece of the same
and make a round ball by pressing and rolling the same.
rolling with the hands, Make a Flattened round bread of it by
rolling with rolling pin on board, Now it up and place on the
dumpling molds, easily available in market, Grease with white
flour liquids on the edges of it , like this, fill one Tsp of Stuff in it ,
close the mold tightly and remove its remains. Open the mold
gently, Look, raw dumpling is ready, Place it under a piece of
cloth. Please do not leave it open. Prepare all dumplings
like this and cover them too under the cloth.
By now our sugar syrup gets ready, put in a Pot.
Put a Wok on the gas, pour oil once it gets hot, Keep the flames
on medium, Let the oil gets hot.
Put few dumplings one by one and fry them, Keep stirring,
turning and pressing till they turn brown, take out in a Strainer to
remove extra oil, Put them in Sugar syrup and dip for 5-10
minutes,
Our Sweet Dry fruit Saffron n sugar syrup Dumpling is ready, it is very very tasty and delicious.
