Hoto Noodles are thick noodles from the five lakes region of Yamanashi prefecture, the area where Mt. Fuji is. They are wide, flat noodles simmered in a miso broth with kabocha (Japanese pumpkin) and other vegetables. It’s an easy, hearty and satisfying bowl of soup and noodles. Learn this regional speciality in this video.

Ingredients for 3-4 servings:

300-400g of hoto noodles (or tagliatelle)
200g of thinly sliced pork
¼ kabocha
⅛ of a napa cabbage
½ carrots
¼ daikon
4-5 shiitake mushrooms or ½ bunch of shimeji
1 long green onion
2 abura-age (fried tofu)

7 cups water
1 tbsp of dashi*
2 tbsp of miso*

For the topping:
