Goan Egg Chops Recipe:
For the Potato mixture:
Potatoes - 4 Large
Maida - ¾ Cup
Water - 1 Cup
Salt - ¾ tsp
Black Pepper Powder - 1 tsp
Coriander Leaves (finely chopped) - 1 tbsp

For the Eggs:
Eggs (boiled) - 4 nos
Curry Leaves (finely chopped) - ½ tsp
Turmeric Powder - ½ tsp
Red Chilli Powder - 1 tsp
Salt - ½ tsp
Oil - 1 tbsp
Coriander Leaves (finely chopped) - 1 tsp

For the Breading:
Fine Rava - ¾ Cup

Other Ingredients:
Oil - For Pan Frying

Instructions:
1. Pressure cook the potatoes for 3 whistles on a medium flame or until fork tender and mash them completely
2. To the mashed potatoes add pepper powder, salt and coriander leaves, mix thoroughly and divide the mash into equal portions and set aside.
3. In a pan pour oil and let it heat up, once hot add turmeric and chilli powder making sure not to burn them, add the cut eggs and fry them until golden brown. Add salt and pepper at the end and take it off the flame.
4. Flatten the mash and add an egg and cover it completely with the mash.
5. Shape it as you desire and roll the mash in fine rava
6. Pan fry the chops until golden brown.
