Recipe:

A 3 kg or 6.6lbs piece of pork neck
And a head of garlic peeled and pressed.

Then for the rub, you'll need:

4 Tbsp Rock salt or pickling salt
1 Tbsp Ground black pepper
1 Tbsp Sweet smoked Paprika
1 Tbsp Hot Smoked Paprika
1 Tbsp of mustard seeds
1 Tbsp dried rosemary
1 Tbsp ground coriander
1 Tbsp dried thyme
1 Tbsp dried oregano
And three bay leaves.
