Hello, today I am sharing some of the meals we had the past week. I hope you enjoy!

Chicken and Dumplings
2 large chicken breasts, cooked and shredded
*1/3 cup butter
*1/3 cup flour
8 cups chicken broth
2 cups heavy cream or half and half
1 teaspoon onion powder
4 carrots, peeled and diced
5-7 potatoes, peeled and diced
salt and pepper to taste

Boil carrots and potatoes until done. Melt butter in large pot, once melted add in flour to make a roux. Stir around for a few minutes until bubbly then add in chicken broth slowly while stirring. Then add in heavy cream or half and half, the cooked chicken, and the cooked potatoes and carrots. Let come to boil. Then add dumplings (recipe below) and cook an additional 5-15 mins or until dumplings are done.
*I accidentally said 1/4 cup of butter and flour in my voiceover but I used 1/3 cup of each.

Dumplings:
2 cups flour
3 teaspoons baking powder
3 Tablespoons oil
*3/4 cup buttermilk (or 3/4 cup milk and 2-1/2 teaspoons of vinegar or lemon juice)

Mix all ingredients together to form a soft dough. Fold over on itself a couple of times, but don't overwork the dough. Tear off pieces and drop into boiling soup cook until done, 5-15 mins.

Cajun Chicken Pasta
1 lb box of pasta
2 cups heavy cream or half and half
1 Tablespoon cajun seasoning
2 chicken breasts, diced
1-1/2 cups parmesan cheese, or to taste
additional garlic powder

Boil pasta until done.
Cook chicken in a little olive oil and the cajun seasoning. Remove and add in heavy cream or half and half, once heated through add in cheese, cooked chicken and cooked pasta. Add additional garlic if desired or more cajun seasoning, or cheese.

Potato, Chicken, Broccoli Skillet
2 chicken breasts, diced
5-8 medium potatoes, peeled and diced
1 bag frozen steamable broccoli
olive oil
seasonings, I used:
McCormick Grill Mates Roasted Garlic and Herb
McCormick Grill Mates Montreal Chicken
Original Dash

Preheat oven to 400 F. Toss potatoes in 1-2 Tablespoons of olive oil and season to taste with seasonings listed above. Bake for 45 minutes or until potatoes are cooked through.
While potatoes are cooking, in a large skillet place chicken, 1 tablespoon of olive oil, and season with seasonings listed above. Cook until chicken is done. Microwave steamable frozen broccoli until done. Combine all in skillet once all is cooked and then serve with favorite condiments, I like honey mustard my fiancé prefers wing sauce.
