Christmas cake is a type of fruitcake served at Christmas time in many countries.

Ingredients:-

1/4th cup raisins/ kishmish
1/4th cup chopped cherries
1/4th cup chopped dates/ khajur
1/4th cup chopped cranberries
1/4th cup chopped apricots/ khubani
1.5 cups apple juice/ grape juice/ any other flavoured fruit juice to soak fruits
1 cup all-purpose flour/maida
3/4th cup powdered sugar
½ cup thick curd
½ cup milk
4 tbsp olive oil/ any unflavoured oil
1 tsp baking powder
1 tsp pure vanilla extract
3/4th tsp baking soda
1 tsp vinegar
1/4th cup tutti-frutti
2 tbsp chopped cashews
2 tbsp chopped walnuts

Method:-

For soaking of fruits:-

Take 1/4th cup raisins/ kishmish, 1/4th cup chopped cherries, 1/4th cup chopped dates/ khajur, 1/4th cup chopped cranberries and 1/4th cup chopped apricots/ khubani.

Soak all the fruits for at least 1 hour or until tender in 1.5 cups apple juice/ grape juice or any flavoured fruit juice.

For preparation of Cake batter:-

Take 1 cup all-purpose flour/maida and 3/4th cup powdered sugar and sift the dry ingredients.
Add ½ cup thick curd, ½ cup milk, 4 tbsp olive oil/ any unflavoured oil, 1 tsp baking powder, 1 tsp pure vanilla extract, 3/4th tsp baking soda, 1 tsp vinegar, 1/4th cup tutti-frutti, 2 tbsp chopped cashews and 2 tbsp chopped walnuts.
Mix well

Baking of Cake:-

Grease the cake tin/ bread loaf tin with some oil and dust it with some flour.
Pour the preapared fruit cake batter in the tin.
Bake the cake for around 35-40 minutes in a preheated oven at around 180 degree celcius.
Once cake is baked, remove it from oven and cool it.
Insert a toothpick/ knife to check whether cake is done.
Run a knife along the edges of the cake to loosen it from tin.
Invert the cake tin and remove it on a plate.
Slice and serve... :)
