I'm back with recipes for salads to try this summer! These 1980s salad ideas maybe be old favorites or new to you - cucumber mint salad, white bean salad, and a slightly unusual fruit salad dressing.

SLICED CUCUMBERS IN YOGURT WITH FRESH MINT
2 large cucumbers very thinly sliced
1 1/2tsp salt
8oz plain low fat yogurt
1Tbsp finely chopped onion
1/4tsp sugar
dash pepper
1 1/2tsp finely chopped mint

1. Lightly toss cucumbers with 1tsp salt. Chill well.
2. Meanwhile, combine yogurt, remaining salt, the onion, sugar, and pepper.
3. Drain cucumber. Toss with yogurt mixture; refrigerate until well chilled - about 2 hours.
4. To serve; turn cucumber mixture into shallow serving bowl; serve with chopped mint


HONEY-LIME DRESSING
1c mayonnaise
1/2c honey
1c heavy cream, whipped
1/4c lime juice

1. In small bowl, combine all ingredients well.
2. Refrigerate, covered, until ready to use. Delicious on fruit salad.

TUNA AND WHITE BEAN SALAD
2 cans white kidney beans
1/4c red wine vinegar
1/4c chopped parsley
3 green onions, chopped
1/4c salad oil
1tsp salt
dash pepper
1 can (6.5oz) chunk style tuna, drained and broken into pieces
3 hard cooked eggs, quartered

1. Drain kidney beans; turn into medium bowl.
2. Add vinegar, parsley, onion, oil, salt and pepper stir gently to mix well.
3. Refrigerate, covered, to chill well - at least 2 hours.
4. To serve, toss gently with tuna and one of the eggs. Turn salad into bowl. Garnish with remaining quartered eggs.
