Fried Bake (Floats) with Tomatoes and Saltfish | Taste of Trini

Fried Bake and Tomatoes with Saltfish is one of our staple Trini dishes back home. It's so simple, yet so flavourful. Hope you enjoy it!

Ingredients:

For the Fried Bakes:
2 cups of flour
1 tsp yeast
1 tsp sugar
1 1/2 tsp of crisco or cookeen (or butter)
2 tsps baking powder
1/2 tsp salt
lukewarm water to make the dough

For the Tomatoes and Saltfish:
12 ounces boneless saltfish/ salted cod/pollock
4 tomatoes
2 heads of garlic (20 cloves), minced finely
4 pimento peppers (capsicum chinense) chopped finely
1 hot pepper
1 onion, diced finely
