Ingredients

SLICED BITTER GOURD - 300 GMS
OIL - 2 TBSP
URAD DAL - 1/2 TSP
MUSTARD SEEDS - 1/2 TSP
CUMIN SEEDS - 1/2 TSP
ASAFOETIDA POWDER - 1/4 TSP
CURRY LEAVES
SALT - 1 TSP
TURMERIC POWDER - 1/4 TSP
KASHMIRI RED CHILLI POWDER - 1 TSP
CUMIN POWDER - 1 TSP
CORIANDER POWDER - 1 TSP
ROASTED CHANA DAL - 1 TBSP
DESICCATED COCONUT - 1 TBSP
LARGE SLICED GARLIC - 1 PIECE
CUMIN SEEDS - 1/2 TSP
RED CHILLI - 3 NOS.

Method:

1. Slice the bitter gourd thinly and keep the slices aside.
2. To a pan, add oil, urad dal, mustard seeds, cumin seeds, asafoetida powder, curry leaves and saute.
3. To this tempering, add all the bitter gourd slices.
4. Toss and fry the bitter gourd pieces till they turn golden brown in color on high flame.
5. Keep stirring at intervals to let the slices cook evenly on all sides.
6. Add salt when the bitter gourd is half cooked.
7. Reduce the flame and add turmeric powder, Kashmiri red chili powder, cumin powder, coriander powder and mix everything.
8. To a mixer jar, add roasted chana dal, dessicated coconut, garlic, cumin seeds, red chilies and grind to a fine powder.
9. After the bitter gourd turns into brown color, add the ground masala powder and mix everything.
10. Once the masala powder has coated the bitter gourd, saute for about five minutes and turn off the stove.
11. Serve the Bitter Gourd Fry with hot steaming rice.
