Masala vada, a crispy deep fried fritter made from chana dal, onion, spices and herbs, is a popular street food of South Indian cuisine.
It is an ideal evening tea time crispy and crunchy snack which can be eaten with coconut chutney, green chutney, red chutney or tomato ketchup.

Ingredients

Soaking & blending dal
• 1 cup (200g) split chickpeas (chana dal / Bengal gram)
• 1 green chilli
• 1 dry red chilli

Preparation of dough
• 1 tbsp soaked dal
• 1 medium sized finely chopped onion
• 1 inch piece of ginger (grated)
• 2 finely chopped green chillies
• 4 tbsp rice flour
• 1 pinch of asafoetida (hing)
• 2 tsp salt
• 1 tsp roasted cumin powder (bhuna jeera)
• 1 tsp fennel powder (saunf)
• 1 tsp red chilli powder (kashmiri lal mirch)
• ½ tsp garam masala powder
• Few curry leaves
• Finely chopped coriander leaves

Frying vada
• Oil for frying
