Hey beautiful people! Welcome back to SLifeTV!
In today’s video, I’m sharing my delicious homemade fish stew using Horse Mackerel (commonly called Sabida or Ice Fish in Delta State). This rich, Savary tomato sauce is packed with fresh herbs, fried fish, and eggs perfect with rice, yam, plantain, or potatoes!
It's easy to make and full of flavor. Try it and thank me later!

INGREDIENTS LIST

For Marinating the Fish (Sabida / Horse Mackerel):

Horse mackerel fish (washed with lemon and salt)

Blended mix of:

Scotch bonnet pepper (fresh)

Onions

Ginger

Garlic


Seasoning cubes

Dried thyme
Salt

Curry powder

Basil (dry or fresh)

Nutmeg (optional)

Parsley

Oregano

Fresh thyme (whole sprigs)

Chunked onions (for frying oil)

Sunflower oil (for frying)


Marinate for at least 1 hour before frying.


For the Stew (Tomato Sauce):

Fresh tomatoes (blended)

Scotch bonnet pepper (blended)

Onions (blended and extra sliced)

Fresh ginger and garlic (blended)

Palm oil (bleached)

Some oil from frying the fish

Seasoning cubes (same as used for the fish)

Ground crayfish (optional)

Fresh basil leaves (Basilikum)

Fresh thyme (leaves)

Cooking Method Summary:

1. Frying the Fish:

Heat sunflower oil with fresh thyme and chunked onions.

Fry marinated fish until golden. Set aside and reserve oil.


2. Preparing the Stew:

In the same pot, mix some reserved fish oil and a little bleached red oil.

Sauté sliced onions until translucent.

Add ginger and garlic, cook for a few minutes.

Add the blended tomato/pepper/onion mix.

Let it cook on low heat for 20–30 minutes until well reduced.

Finish with fresh basil and thyme for that beautiful aroma and color.

Season with the same fish spices, salt and crayfish (optional).

Add fried fish and allow it to simmer.

Add boiled eggs (optional).


Perfect Pairings:

White rice

Fried plantains

Fried potatoes

Boiled yam

Even with bread or spaghetti!
