This savory side is so easy to make and out of this world delicious. Use it to make an appetizer, serve over pasta or chicken/fish, or top a pizza. This is a great way to preserve your end of summer tomatoes.

3 lbs. cherry or grape tomatoes
12 cloves of garlic, peeled
1 t. salt and pepper (more or less to taste)
1/2-1 t. crushed red pepper flakes
A handful of fresh thyme
About 1/2 cup of olive oil

Add all to a baking sheet and roast at 275* for 1 1/2-2 hours. Cool to room temperature and remove thyme stems. Store in the fridge for two weeks or freeze for several months.
