I'm Despina and I show you how to make Flaounes (Cypriot Easter Bread).

The following recipe makes approximately 80 flaounes for my big Greek family! You can adjust the amounts according to your own needs.

You will need the following...

Dry ingredients:
- 3kg (6.5 lb) plain flour, preferably unbleached
- 0.5 cup of sugar
- 1.5 teaspoons of salt
- 10 teaspoons of dry yeast

Plus 5 tablespoons of a spice mix containing:
- 1.5 teaspoons of mastic (or Arabic Gum, not Gum Arabic!) finely ground with a morter and pestle
- 6 cloves, finely ground
- 4 teaspoons of anise seeds, finely ground
- 1.5 teaspoons of cinnamon, finely ground

You'll also need:
- 2L (68 fl oz) of milk, luke warm (you can replace a cup or so with cream)
- 2 cups of vegetable oil or peanut oil
- 3 cups sesame seeds, blanched and drained

Cheesy filling:
- 4kg (8 or 9 lb) tasty cheese, such as a cheddar
- 1kg (2.2 lb) haloumi
- 3 teaspoons of mastic or Arabic Gum, finely ground
- 9 teaspoons of baking powder
- 7 cups of semolina
- 1 to 2 bunches of mint, chopped
- 4 cups of sultanas or raisons
- 16 eggs
