Ragada patties is a popular street food. Aloo tikki is served in spicy hot ragada topped with onion, tamarind chutney and shev. This can be a complete meal which tastes just awesome. We are missing the street food during due to lock down. So do try these tangy and yummy ragada patties at home and write to me. You also can like, share and subscribe.

Ingredients:
• 1 cup dry white Peas
• 1/2 tsp Turmeric powder
• A pinch of Hing (Optional)
• A little Water
• 2~3 tsp Oil
• 1/2 tsp Cumin seeds
• 1 medium size finely chopped Onion
• 1 tsp Ginger-garlic paste
• 1 medium size finely chopped Tomato
• 1 tsp Coriander powder
• 1/2 tsp roasted Cumin powder
• 1 tsp Garam masala
• 1 tsp Red chili powder
• Water
• Salt to taste
• A slice of Onion
• Coal
• 1 tsp Ghee
• 3 boiled and peeled Potatoes
• 1 tsp Ginger-Garlic paste
• Finely chopped Green chili
• 1 tsp Turmeric powder
• Salt to taste
• Finely chopped Coriander leaves
• Lemon juice
• 1 tsp Thick poha powder
• Oil for shallow frying
• Tamarind chutney
• Green chutney
• Finely chopped Onion
• Shev

Method:
• Wash peas really good and soak them in enough water overnight or for at least 5-6hours.
• Transfer the soaked peas into the pressure cooker and add turmeric powder, hing, water and
mix well.
• Adding hing is optional. You can skip it if you don’t want.
• Close the lid and cook on medium heat until 1 whistle.
• Heat up oil in a pan.
• When oil is hot enough add cumin seeds and let it splutter.
• Add onion and fry until it turns light golden.
• Add ginger-garlic paste and mix well.
• Add tomato and fry for about 3-4 minutes.
• When tomato and onion are cooked well add coriander powder, roasted cumin powder, garam
masala, red chili powder and fry for about 2 minutes until masale release oil.
• When masale begin to release oil add boiled peas, water to adjust the consistency, salt and mix
well. Cook until it begins to boil for about 7-8 minutes.
• Turn off the gas.
• Place a slice of onion carefully on the ragada.
• Heat up a piece of coal really good on the gas and place it on onion slice.
• Add ghee on hot coal and cover it immediately for about 5 minutes.
• Remove the lid, coal and onion slice.
• Smoky flavoured ragada is all ready.
• Mash the boiled potatoes into a bowl.
• Add ginger-garlic paste, green chili, turmeric powder, salt, coriander leaves, lemon juice and
mix everything well together.
• Blend thick poha into powder in a blender jar into powder and add that powder.
• You can add red chili powder, coriander powder in the mixture if you want.
• Mix well and roll patties of the size and shape you want from it.
• Heat up oil for shallow frying. Transfer patties on it and fry well until nice golden from both
sides.
• After frying for about 3-4 minutes from one side flip the patties over and fry well from other
side too.
• When patties are fried well from both sides take them out into a dish.
• For plating ragada patties place patties in the dish. Spread ragada, sweet chutney, green
chutney, onion, sev.
• Ragada patties is all ready.
