Mushroom Cheung Fun Noodle Rolls

Noodle Rolls Batter:

1/2 cup + 3 tablespoons rice flour
1 1/4 tablespoons potato starch
1 1/4 tablespoons wheat starch
1/4 teaspoon salt
1 cup + 1 tablespoon water

Filling:

5 large shiitake mushrooms, dried and rehydrated (or mushrooms of your choice)
1 teaspoon garlic powder
2 teaspoons soy sauce
1/4 teaspoon sugar
2 scallions, chopped


Sweet Soy Sauce

2 tablespoon + 2 teaspoon soy sauce
2 tablespoon sugar
1/4 cup water
