Chicken Kofta (Meat Ball) curry, or simply Koftay, is a classic Pakistani/Indian curry made with tender meatballs simmered in a spicy, flavorful sauce.

This recipe has all the traditional flavors of old-fashioned koftay. These are commonly fried before adding in gravy which I never know why? I do not fry the meat balls as this way is more healthy yet easy. Spices are what give this kofta curry so much flavor.

My carefully crafted recipe of restaurant style kofta curry will ensure that the meatballs remain tender and do not break in the curry. Koftay ka salan is loved in every household as a delicacy.

This recipe will help you master the perfect koftas. The meat balls are soft, juicy and tender yet stay intact and do not break in luscious curry. Deep frying gives a harder exterior to the meatballs.

Tips:
1). Ask your butcher to grind your mince twice or pulse mince in a food processor for a finer consistency, 2). Completely drain out any water from your mince,
3). Prepare your meatballs smooth with no cracks before adding them to curry,
4). Do not touch the meat balls with cooking utensil while they are simmering. Slowly move the pan to ensure mixing as demonstrated.
