Sicilian Sfingi / Zeppole | Mother In Law Recipe ‼️ FULL RECIPE BELOW ⬇️

Sfingi (sfinci) is a traditional and popular Sicilian delight that are fried pastry dough balls sweetened with sugar. Sfingi are sometimes referred to as zeppole and can be compared to donuts in America. Since this is a recipe from my Sicilian mother-in-law, I will show you how to make them in the same way that she does. Enjoy from my family to yours! ❤️

INGREDIENTS
250g (2 cups) of pastry flour (all purpose or type 00 flour are acceptable)
2 tablespoons of granulated sugar 250ml water (1 cup)
1 tablespoon of olive oil1 heaping tablespoon of yeast
1 tablespoon of honey
1/4 teaspoon of salt
icing/powdered sugar for dusting

*optional lemon zest and cinnamon in dough or raisins

INSTRUCTIONS
1. Add yeast and honey to warm water and set aside for 5 minutes.
2. Mix flour and salt together.
3. Add yeast mixture to flour and add 1 tablespoon of oil mixing well.
4. Cover with plastic wrap and let it rise for approx 2 hours until it doubles in size.
5. Heat oil on low heat and use 2 tablespoons to drop dough in oil. Don’t over crowd. Fry on medium heat for a total 2 minutes. Watch video for special instructions.
6. Sprinkle with powdered sugar.
