INGREDIENTS

1 kg (2.2 pounds) tomatoes
1 tablespoon Olive oil
1/2 medium onion (50 grams), chopped
1 garlic clove, crushed
1 teaspoon Himalayan salt
1/2 teaspoon Oregano
3-4 Fresh Basil leaves, chopped

Directions:
1. Mark a shallow "X" in the bottom of each tomato.
2. Fill a large pot with water and bring to a boil.
3. Plunge the tomatoes in boiling water for 1 minute or when the skin begins to peel back. This will loosen their skins. Then, rinse in cool water.
4. Remove the skins and core the tomatoes.
I leave the seeds in the tomato sauce as the gel-like “guts” that surround the seeds make ripe tomatoes taste better. Even if you prefer the texture of seedless tomato sauce, Cook’s Illustrated has a s approach that involves straining the guts over a bowl to catch all that umami-rich jelly, which you then stir into the sauce before serving to maximize that fresh tomato flavor.
5. Chop the tomatoes into small chunks and set aside.
6. In a large pan, heat olive oil. Add chopped onion and sauté over low heat until golden. Add crushed garlic and sauté until golden.
7. Add chopped tomatoes to the pan, season with salt, oregano and basil.
8. Bring the mixture to boil, reduce the heat and simmer for 30 minutes or until reaches desired thickness.
9. If you prefer smooth tomato sauce, puree the sauce using a hand blender. Transfer to a jar.
