Prickly Pear & Gorgonzola Ciabatta Sandwich

When my siblings and I came to the US 20 years ago, we never imagined the little patch of land we bought would grow into such a special family farm. Every visit, Mama and my father would plant something new. fruit trees, over 200 olive trees, and about 10 years ago, a row of prickly pears. Four years ago, they finally joined us here full time, caring for the land together the way they always dreamed. 🌳🌿

Last year, the prickly pears gave fruit for the very first time, and this year the harvest has been incredible. sweet, juicy, and worth the wait. And in true Mama fashion, she turned them into a beautiful sandwich with Gorgonzola, prosciutto, and balsamic. A meal that’s more than lunch—it’s a taste of our family’s journey, patience, and love. 💛

Ingredients
• 4 slices ciabatta (½ inch thick)
• 2 prickly pears, peeled & sliced
• 8 thin slices prosciutto
• ¼ cup arugula
• Gorgonzola cheese, sliced
• Olive oil
• Balsamic reduction

Instructions
Lightly toast the ciabatta in a hot pan with a drizzle of olive oil. Layer on the Gorgonzola, prickly pear slices, prosciutto, and arugula. Finish with a drizzle of balsamic reduction and olive oil. Serve warm and enjoy.
