A fun holiday twist to the classic Rice Krispies treat, these squares are filled to the brim with spiced gingerbread flavour thoughout, and is even decorated like a gingerbread cookie with it's white chocolate drizzle on top and some crushed gingersnaps (or gingerbread cookies!) to give it a little extra spice and flavour on top! I even toasted the Rice Krispies and browned some butter (of course!) to give these treats and even deeper and richer flavour with some slight nutty undertones.

This is a really fun activity to do with the kids and you can even use cookie cutter and cut these bars into fun little shapes and decorate them however you like!

Ingredients

For the Rice Krispies Treats
8 cups (240g) regular or holiday Rice Krispies, toasted
1 tbsp ground ginger
2 tsp cinnamon
3/4 tsp ground cloves
3/4 tsp allspice
3/4 tsp nutmeg
1/2 tsp ground black pepper
3/4 cup salted butter, melted and browned
16 oz. (454g) marshmallows, homemade or store brought (try it with gingerbread or gingerbread chai swirled marshmallows!)
1/3 cup (117g) fancy molasses
1 tsp pure vanilla extract
1/2 tsp orange extract (optional)

For the topping + drizzle
6 oz. (170g) white chocolate, melted
1 1/2 tbsp (22ml) fresh orange juice
1 cup crumbled ginger snaps or gingerbread cookie crumbs (from about 4 or 15 cookies depending on the size)
