ONION BHAJI with YOGURT MINT SAUCE

Ingredients:

Onion Bhaji

2 tbsp red split lentils – (soaked in water for 20 mins.)
2 brown onions (sliced thinly)
1 small green bell pepper (sliced thinly)
½ half potato (sliced thinly)
1 or 2 green chili (sliced thinly)
1 tsp fennel seeds
½ tbsp ginger garlic paste
½ tsp salt
2 tsp curry powder
Handful coriander (chopped)
2 medium eggs
1 ½ cup gram flour or chickpea flour
Corn oil for frying

Mint yogurt sauce
½ cup plain yogurt
¼ or 1/8 cup mint leaves
½ garlic clove
2 tsp lemon juice
Salt and pepper to taste
2 tsp sugar


Procedure:
1. Soak red split lentils in cold water for 20 minutes.
2. Mix all the ingredients except gram flour until onions are coated.
3. Add gram flour and mix until well blended.
4. Heat oil. Wet your hands first with water and start to mold the mixture into a size of golf ball.
5. Deep fry the onion bhaji’s until golden brown.
6. Make the dipping sauce by mixing all the ingredients for the mint yogurt sauce in food processor or blender.
7. Serve while its hot.
