Beef Stock is a very simple yet delicious soup/broth enhancer. It's savoury, rich and sweet from the beef bones and vegetables used. I chose to use beef bone marrow with some beef meats as the stock will then contain the beef collagen, and I get to use the beef meat for another dish at the same time. ;)

The beef is first blanched with ginger and galangal slices to remove the impurities and scum from the beef, and to neutralize its strong, raw smell. Instead, a nice earthy fragrance will permeate the kitchen. I personally dislike the raw beef smell, so in the ginger and galangal slices goes with the blanching. This is optional if you're okay with the smell.

The beef bones is then removed from the blanching and added to the stock pot alongside the rest of the vegetables and herbs. It is boiled for 3 hours to extract the beef flavour and sweetness of the vegetables into the stock. When the 3 hours are up, the beef and vegetables are extracted to obtain the clear, rich beef broth infused with sweetness of the vegetables.

It's nice to keep some beef stock at home to make delicious beef dishes whenever you like! The beef stock can be kept in the refrigerator for a few days and deep-frozen for a few weeks, while the meat can be easily removed from the bone to use as protein for other beef dishes like Beef Noodle Soup.
