This is how I use my offset smoker without charcoal. Plenty of ways to cook but figured I'd show one method on how to use only wood splits.

We cook ribs, chicken thighs (yes I screwed up and called them wings), chicken drumsticks, and a chuck roast.

We also touch on seasoning metal that no longer has the manufacture paint.
